- 1 1/2 lbs of peeled and deveined shrimp
- Olive oil to drizzle
- 1 tbsp of chipotle powder
- 1/2 tsp of kosher salt
- 1/2 tsp of freshly ground black pepper
- 2 cups of quartered grape tomatoes
- 2 cups of diced zucchini
- 1 cup of small-diced baby potatoes
- 1/2 yellow onion
- Fresh cilantro leaves to garnish
Instructions:
- Preheat a grill pan over medium heat.
- Prepare 4 large pieces of foil.
- Split the shrimp evenly among the foil.
- Drizzle oliveoil over the shrimp then season with chipotle powder to taste, and a pinch of salt and pepper.
- Slice the onions.
- Top the foil packs with the tomatoes, zucchini, potatoes and the onion.
- Season the vegetables with salt and pepper.
- Wrap up the shrimp and vegetables in the foil packets making sure the foil packets are wrapped tightly.
- Grill the packets until the shrimp are cooked through and the vegetables are slightly tender, or for about 15 minutes.
- Serve in the foil packets and garnish with cilantro leaves.
