Ingredients
- 1 lbs. sliced roast beef
- 2 onions
- 4 green peppers
- 1 loaf garlic bread
- 6 slices pepper jack cheese
- 2 tbsp. vegetable oil
- salt and pepper to taste
Directions
- Wash and dry all produce.
- Carefully slice the onion and peppers into thin strips. You can do this before leaving home if you want to make this recipe even easier. Just store the veggies in a sealed container until you’re ready to us them.
- Over a strong fire, heat a drizzle of oil in a cast-iron skillet.
- When the oil pops when it is sprinkled with water, toss in the onion and peppers. Cook until browned and beginning to soften. Remove from the heat and set aside.
- Cut a large section of aluminum foil to fit the garlic bread. You’ll need to slice the bread in half, lengthwise, and add a layer of roast beef.
- Next, add the peppers and onions, another layer of beef, and the remaining peppers and onions.
- Top with all slices of the cheese and then the top of the bread.
- Cover the sandwich with two layers of foil and place over the fire.
- Cook for around 10 minutes or until the sandwich is heated through and the cheese has melted.
- Slice and serve hot!
