Ingredients

- 4 tbsps butter
- 4 c. frozen Southern Style Diced Hash Brown Potatoes
- 1 lbs deli ham
- 8 eggs beaten
- 1 c. shredded sharp cheddar cheese
- 4 green onions sliced thin
- Salt and pepper to taste
- Hot sauce optional for serving
Instructions:
- Defrost the hash browns and chop the ham into bite-sized pieces.
- Build a strong fire and spread out the coals to create a medium heat for cooking.
- Lower the grill grate and heat the cast-iron skillet over the flames.
- Add the butter to the skillet and swirl to coat evenly.
- Dump in the hashbrowns and ham, and cook until browned stirring occasionally to ensure they don’t stick to the bottom of the pan. That should take about 10 minutes.
- While the ham and potatoes cook, broccoli eggs into a medium bowl and beat until smooth season with salt and pepper.
- Add the eggs to the cooked hashbrowns and ham and cook over medium heat, continuing to stir until the eggs are just cooked but still soft. Approximately five minutes.
- Sprinkle the cheese over the top of the pan and stir into the mix. Top with the chopped green onions and serve hot.
