  • 1 c. flour
  • 2 tbsp. sugar
  • 1 ½ tsp. baking powder
  • ½ tsp. salt
  • 1 c. milk
  • 1 egg
  • 1 banana, sliced into ¼-inch pieces
  • ½ c. blueberries
  • coconut oil

Instructions

One of the things you’ll love about this recipe is that you can make part of it before you leave home.

  1. Combine: flour, sugar, baking powder, and salt in a bowl and stir until thoroughly blended.
  2. Add the mixture to a sealed container or zip-top bag.
  3. When you’re ready to make breakfast, whisk the egg and milk together in a small bowl using a fork or whisk.
  4. Add in the dry ingredients, stirring continually to combine. Leave some lumps to be sure you don’t overwork the batter.
  5. Heat a cast-iron pan over the fire and melt a 1 tbsp of coconut oil to the pan and allow it to coat the bottom thoroughly.
  6. Layer a few thing banana slices to the bottom of the pan and pour 1/4 c. of batter over the slices to coat.
  7. Sprinkle blueberries into the batter.
  8. Allow to cook for 2-3 minutes or until the batter begins to bubble up.
  9. Using a spatula, gently turn the pancake and cook for another minute or so until golden brown.
  10. Repeat until you’ve used all the batter, adding coconut oil before each pancake, but only enough to coat the bottom of the pan.
  11. Serve warm with maple syrup, jam, peanut butter, or honey!
