- 1 c. flour
- 2 tbsp. sugar
- 1 ½ tsp. baking powder
- ½ tsp. salt
- 1 c. milk
- 1 egg
- 1 banana, sliced into ¼-inch pieces
- ½ c. blueberries
- coconut oil
Instructions
One of the things you’ll love about this recipe is that you can make part of it before you leave home.
- Combine: flour, sugar, baking powder, and salt in a bowl and stir until thoroughly blended.
- Add the mixture to a sealed container or zip-top bag.
- When you’re ready to make breakfast, whisk the egg and milk together in a small bowl using a fork or whisk.
- Add in the dry ingredients, stirring continually to combine. Leave some lumps to be sure you don’t overwork the batter.
- Heat a cast-iron pan over the fire and melt a 1 tbsp of coconut oil to the pan and allow it to coat the bottom thoroughly.
- Layer a few thing banana slices to the bottom of the pan and pour 1/4 c. of batter over the slices to coat.
- Sprinkle blueberries into the batter.
- Allow to cook for 2-3 minutes or until the batter begins to bubble up.
- Using a spatula, gently turn the pancake and cook for another minute or so until golden brown.
- Repeat until you’ve used all the batter, adding coconut oil before each pancake, but only enough to coat the bottom of the pan.
- Serve warm with maple syrup, jam, peanut butter, or honey!
